Hand harvested on 14th February from gentle north facing slopes to the east of Orange. The vineyard is 880m above sea level. The grapes were whole bunch pressed and the juice cold settled prior to fermentation with a Champagne yeast. A long cool ferment was followed by minimal intervention stabilisation. The wine was sparkled by the Charmat technique. A cuvee of Chardonnay 100% was selected for delicate fruit flavours and fine acidity.
